This week for TWD, Stefany of Proceed with Caution chose these Chunky Peanut Butter and Oatmeal Chocolate Chipsters.  They combine the best bits of all my favorite cookies, and even have a little spice in there, too!

Since more cookies are on the baking horizon, I made just a quarter recipe.  I have a lot of half-used bits of chocolate floating around, so I put milk chocolate chunks instead of bittersweet in these, purely for the satisfaction of finishing off a bar.

They came out great, thankfully.  Anytime I have to bake with my precious stash of Jif (which I bring back on trips the States), I sweat a little that the recipe will be a bomb.  The PB is subtle in flavor, but the cookies really smell peanuty, and the little bit of cinnamon and nutmeg gives them a warm flavor.  I baked mine on the low end of the recommended time, so they’d stay a little soft, which is how I prefer a chocolate chip cookie to be.  Dorie notes that these are great cookies to make ice cream sandwiches with.  I totally bet she’s right, but I didn’t have the stomach (or maybe too much of the stomach is really my problem) to try that out!

  5. Those look great! I deliberately used milk chocolate for the chunks in mine–I like it better than dark with peanut butter.

  6. You know I’ve always wanted to go to New Zealand. Anyhoo, your cookies look great, and I think putting ice cream in between two of them would have been a bit much for me too.

  25. Lovely looking cookies. I hope you have discovered the massively large jars of Jif for sale at Costco. Next time find someone to take you and you will be set with Jif for a long time!

  26. Mmmmm. Those look tasty! I remember being a student in England many years ago. I spent a precious amount of money to buy a jar of peanut butter at Harrods. It’s like gold.

  35. I’m with you on the peanuty smell, mine smelled extra peanuty because I added peanuts. Not my first choice, but I wanted to use up some leftover peanuts and I was making them for my DBF’s colleagues, so it didn’t really matter. I have come to the conclusion though, that while I like peanut butter in my cookies, I’m not a fan of peanuts in my cookie.

  43. Finally made these… and had to try very hard not to eat them all myself! I had to send them to work with my partner to remove the temptation!
